THE ESTOUBLON SAVOIR-FAIRE
Château d’Estoublon comprises 200 hectares of land including 120 hectares of olive groves and 20 hectares of vines. The olive groves and vines are classified as Appellation d’Origine Protégée.
From cultivating our olives and grapes right through to selling our bottles, sprays and gift-sets, each and every stage of the production process is carried out according to Château d’Estoublon's strict set of specifications. Our grapes and olives are cultivated and processed at the Domaine itself in line with organic practices, using only manual and mechanical methods and without chemicals.
The wines and olive oils from Baux-de-Provence are characterised not only by their distinctive, unique and richly varied terroir but also by the choices made by man: a common desire to preserve this beautiful terroir.
The Organic choice
In a world in which any other form of growing would be a heresy, we have chosen to keep our history in harmony with our terroir. Since its purchase in 1999, the Domaine has been naturally drawn to organic growing. Our priority is to respect nature and everything we have here and we therefore choose to adhere to an organic approach.
Letting the vines speak
The history of Château d’Estoublon is inextricably linked with that of Baux-de-Provence Valley, of which it is one of the most remarkable sites. Since its purchase by the Schneider family in January 1999, this domaine, situated in the heart of the Southern Alpilles, has been given a new lease of life and new elegance for the third millenium. The vineyards and cellars have undergone major reorganisation and restructuring work.
Grenache Noir, Mourvèdre, Syrah and Cabernet-Sauvignon have been planted for the red wines and Marsanne, Roussane and Grenache for the whites.
The vines receive our utmost care and attention throughout the year using “bespoke” practices that allow them, in spite of Provence’s high temperatures, to reach their full potential and offer a true reflection of their terroirs.

From olive to oil
Situated in the Vallée des Baux, in the heart of Provence, Château d’Estoublon strives to perpetuate the tradition of the local sun-drenched olive oils. From cultivating the olives to selling our bottles, sprays and gift sets, every stage of the process is carried out by Estoublon. Our grapes and olives are grown and processed at the Domaine itself in line with organic practices, using only manual and mechanical methods and without chemicals.
The Estoublon terroir produces five local olive varieties: Grossane, Salonenque, Bouteillan, Béruguette and Picholine, as well as the AOP which is made from a blend of these five olive varieties. Six “extra virgin” olive oils to tempt your tastebuds!
Harvested by hand
The olives are pressed within 12 hours of being picked to guarantee optimum freshness
No chemical products are used and no refining takes place in the production of our oils
Strong and healthy olive trees thanks to careful growing methods and pruning every 2 years

Olive groves that are allowed to breathe: each olive tree has at least 36m² of space surrounding it
We leave our trees for at least 5 years before they are harvested
